Ingredients

Donuts

  • 2/3 cup (150 ml) Silk Vanilla soy, almond or coconut beverage
  • 1 tsp (5 ml) vinegar
  • 2 cups (500 ml) all-purpose flour
  • 1 1/2 tsp (7 ml) baking powder
  • 1 tsp (5 ml) pumpkin pie spice
  • 1 tsp (5 ml) salt
  • 1/3 cup (75 ml) margarine* (or butter), melted and cooled
  • 2 tsp (10 ml) vanilla or maple extract
  • 1/4 cup (60 ml) sugar
  • 1/2 cup (125 ml) real maple syrup
  • 2 eggs*

Glaze

  • 3/4 cup (175 ml) powdered sugar
  • 3 Tbsp (45 ml) maple syrup
  • 2 tsp (10 ml) vanilla or maple extract
  • 1 Tbsp (15 ml) Silk Vanilla soy, almond or coconut beverage
  • 1 cup (250 ml) chopped walnuts, for garnish

*For a vegan version, use vegan margarine and substitute each egg with 1 Tbsp (15 ml) golden flax meal soaked in 3 Tbsp (45 ml) warm water.

Preparation
  • Preheat oven to 200°C (400°F).
  • Combine Silk and vinegar in a small bowl. Set aside.
  • NOTE: Adding vinegar to Silk creates “buttermilk” and mixture will curdle.
  • In a medium bowl, whisk together flour, baking powder, pumpkin pie spice and salt. 
  • In a separate bowl, combine melted margarine, extract, sugar, maple syrup, eggs and Silk mixture.
  • Fold together wet and dry ingredients, being careful not to overmix.
  • Spoon or pipe into greased donut pan and bake for 7-10 minutes or until tops spring back. Cool completely.
  • To glaze, combine powdered sugar, maple syrup, extract and Silk. Dip each donut in glaze, sprinkle with walnuts and allow to set.
