Green Goddess Dressing
Ingredients
  • 1/4 cup Silk Unsweetened soy or almond beverage
  • 3 ounces silken tofu (1/4 block)
  • 1/4 cup (60 ml) mayonnaise or veganaise
  • 2 Tbsp (30 ml) fresh lemon juice
  • 2 Tbsp (30 ml) fresh parsley leaves
  • 2 green onions, green section only, chopped
  • 8 large basil leaves, chopped
  • 1 clove garlic, minced
  • 1 tsp (5 ml) Dijon mustard
  • 1/2 avocado
  • 1/2 (2 ml) tsp salt
  • Freshly ground pepper to taste

Preparation
  • Place all ingredients in a blender or mini food processor and blend until smooth.
  • Adjust salt and pepper.
  • Chill until ready to serve on salad.
